Seedy Date Bark
When I replicated the viral ‘date bark’ trend over on Instagram, my audience went nuts for it! So of course I had to share the recipe here for you too. No food processor required and it’s super easy to make. Wholefood snacking at its finest - I hope you enjoy!
Ingredients:
12 Medjool dates
100g block of dark chocolate
3 tbsp peanut butter (or any nut butter)
3 tbsp seeds (eg. pumpkin/sunflower)
How to make:
Halve the dates & remove the seeds, then squish together on baking paper (skin side down) to make the base.
Layer on peanut butter/nut butter.
Sprinkle with nuts and/or seeds. I’ve used pumpkin & sunflower seeds, but cashews or pecans are also great!
Melt chocolate in a jug/bowl over hot water and spread over the top.
Pop in the fridge until set.
Cut into pieces and pop them in a container to store in the fridge.
Note: you can adjust this recipe to suit whatever you have on hand, using any nut butter you like with your preferred combination of seeds and/or chopped nuts - I’ve even added soy protein crisps before. You don’t really need to measure the ingredients, just use any quantity of dates you like to make the base as big or as small as you prefer, layer on nut butter and sprinkle seeds on top, then cover with melted chocolate!
