Chicken Pesto Pulse Pasta
If you have a packet of pulse pasta hiding in the back of the pantry, this is a super simple recipe to make good use of it! An easy weeknight dinner, or great to prep for grab-and-go lunches through the week.
Ingredients:
1 packet of pulse pasta spirals
1 chicken breast, diced
3-4 pieces of short cut bacon, diced
1-2 tbsp extra virgin olive oil
3-4 tbsp basil pesto
1 cup of rocket (arugula)
Instructions:
Cook pasta as per packet instructions & drain.
In a frypan, cook chicken and bacon in extra virgin olive oil over moderate heat until cooked through.
Turn off the heat and stir through the pesto & rocket.
Add the drained pasta and mix through well.
Enjoy hot or cold!
