Chicken Pesto Pulse Pasta

If you have a packet of pulse pasta hiding in the back of the pantry, this is a super simple recipe to make good use of it! An easy weeknight dinner, or great to prep for grab-and-go lunches through the week.

Ingredients:

  • 1 packet of pulse pasta spirals

  • 1 chicken breast, diced

  • 3-4 pieces of short cut bacon, diced

  • 1-2 tbsp extra virgin olive oil

  • 3-4 tbsp basil pesto

  • 1 cup of rocket (arugula)

Instructions:

  • Cook pasta as per packet instructions & drain.

  • In a frypan, cook chicken and bacon in extra virgin olive oil over moderate heat until cooked through.

  • Turn off the heat and stir through the pesto & rocket.

  • Add the drained pasta and mix through well.

  • Enjoy hot or cold!
