Ginger Spiked Sweet Potato Mash

Ginger + Sweet potato?

Trust me on this one… it seemed a little odd when I first came across the idea, but my gosh it actually works!

Ginger is one of the most fabulous anti-inflammatory spices, which we could all benefit from adding into our diet - however I find that for those accustomed to a standard western diet, many struggle to find ways to do so.

This is a simple way to spice up your mash, whilst also adding some extra colour to your plate.


Ingredients

  • 1 medium sweet potato

  • 2cm piece of fresh ginger

  • 1tbsp extra virgin olive oil

  • Salt & pepper (fine ground white pepper works well)


  1. Peel and dice the sweet potato into roughly 2cm cubes.

  2. Place in a saucepan and add enough water to cover.

  3. Bring to the boil and cook 15-20 minutes until tender (test with a fork - ready when easily breaks through).

  4. Peel and grate the ginger with a fine grater.

  5. Drain the water from the sweet potato and mash well with a fork or potato masher.

  6. Add in the olive oil and ginger and combine well with fork.

  7. Season with salt and pepper to taste.


Serving suggestions: Perfect served with grilled/baked salmon and steamed greens as pictured above, or also works well with steak with grilled vegetable skewers.
