‘Bench’ Muesli

Aptly nicknamed bench muesli because you throw it all in a flip-top jar and keep it on your kitchen bench ready to go!

I have been making this for YEARS as it is such a handy staple - plus it makes a great base for overnight oats for those busy weekdays where you’re rushing out the door in the morning.

Pop a serve in a jar, cover with your choice of milk and leave in the fridge overnight. Serve with yoghurt/kefir/additional berries if desired.


Ingredients:

✧ Rolled oats
✧ Linseeds (also known as flax seeds)
✧ Chia seeds
✧ Hemp seeds
✧ Pepitas (pumpkin seeds)
✧ Sunflower seeds
✧ Dried blueberries
✧ Dried bilberries
✧ Cinnamon

Simply layer in your chosen ingredients and shake up to mix!


You can mix and match to suit your tastes and what you have on hand, but the idea is to maintain a solid base of oats + seeds and/or nuts for a decent balance of carbs, protein, healthy fat and fibre compared to oats on their own.

Perfect as overnight oats as those dried berries plump up overnight and you can simply grab and go in the morning!


↠ Quinoa flakes or buckwheat flakes also work well if you can’t do oats.
↠ If you require higher protein, you can mix protein powder into your milk before adding.
↠ Dried mango, coconut & macadamia is another delish combo.



Why blueberries and/or bilberries?

These little babies are an amazing source of antioxidants, vitamin C and anthocyanins - a potent phytonutrient. Bilberries are an even higher source than blueberries and have red flesh as a result - amazing to support the health of eyes, brain and veins in particular.
